How To Make An Egg-cellent Post-Easter Snack

Why does Easter and holiday celebration have to be associated with candy and sugar?

There’s another wonderful food synonymous with the holiday: hard-boiled eggs! Egg yolks are rich in vitamin D, which your body needs to absorb calcium and maintain healthy teeth. The yolk is also a rich dietary source of the B-complex vitamin choline, which helps brain function and reduces inflammation. The whites are great too they are a low-calorie, low-fat source of protein that is easily digestible.

Now that you’ve boiled, painted, hidden, and found all those colorful eggs from your egg hunt, use them in these delicious and nutritious snacks:

  1. Egg salad sandwiches: First, simply peel and chop the eggs. Then mix them with plain Greek yogurt, chopped celery, chopped green onions, some Dijon mustard and minced parsley. Serve on bread and enjoy!
  2. Cobb salad: You can’t have a Cobb salad with out hard-boiled eggs! In addition to the eggs, Cobb salads also contain chopped salad greens, tomatoes, bacon, grilled chicken breast, avocados, chives, cheese, and a vinaigrette dressing.
  3. Deviled eggs: Peel the eggs, slice them in half lengthwise, and remove the yolks. Mash the yolks with mayonnaise, vinegar, mustard, salt and pepper. Evenly place a heaping teaspoon of the yolk mixture into the egg white. Sprinkle the finished eggs with a dash of paprika.
