4 Ways to Celebrate National Spinach Day

In honor of National Spinach Day, March 26th, here are some ways to take a page from Popeye’s book and work this magic green into every part of your day.

Just don’t forget to check your teeth for rogue spinach!

Breakfast: This may be the most important meal of the day, but all too often it’s the least healthy. Instead of a bowl of sugary cereal or a breakfast sandwich made with processed meat, start your day with some spinach by adding it to a breakfast casserole, omelet, breakfast burrito, smoothie, or get fancy and make a spinach souffle.

Lunch: A spinach salad is an easy, filling, and nutritious lunch. Add boiled eggs, bacon, caramelized onions, sauteed mushrooms and blue cheese for a tasty rustic salad. Or for a summery feel, add walnuts, feta cheese, and almond slivers. On the go? A green smoothie works great for lunch, too.

Dinner: Spinach is a versatile green, so go crazy with adding it to dinner recipes. Toss it on pastas and pizzas, make a spinach bed for any entree, sauteed it as a side, or mix it with other sides, like sweet potatoes or mushrooms.

Dessert: Feeling adventurous? Try adding spinach to dessert. It sounds strange, but pureed spinach can be easily snuck into cake, cupcake or brownie batter. Aside from the green color, you probably won’t notice a thing except for the amazing health benefits!
