3 Recipes That Sneak Veggies Into Sweet Treats

When kids come home in search of milk and cookies, it’s hard to convince them to eat healthy veggies instead.

Be prepared with one of these sweet treats that have a secret ingredient: vegetables!

  1. Veggie cookies: It sounds weird, but it’s easy to sneak vegetables into cookies without raising suspicion. Try adding half a grated zucchini and one grated carrot to two cups of quick oats and two ripe bananas. Mix with cinnamon, ginger, vanilla extracts and honey. Spoon onto a cookie sheet and bake for 15 minutes at 350F. You can also try different veggies and nuts or dried fruits.
  2. Carrot and spinach brownies: Brownies are another excellent vehicle for hidden veggies. Try adding half a cup of carrot puree and half a cup of spinach puree to three oz. bittersweet chocolate, half a cup firmly packed brown sugar, half a cup cocoa powder, two tablespoons of butter, vanilla extract, two egg whites, _ cup flour, _ teaspoon baking powder and _ teaspoon salt. Mix and bake in an 8×8 pan for 35-40 minutes at 350F.
  3. Creamy avocado lassi: This is kind of like an avocado milkshake. Simply mix in a blender: two peeled and chopped ripe avocados, half a cup plain Greek yogurt, one cup whole milk, 2-3 tablespoons of honey and crushed cardamom seeds. Blend and serve. Avocados are full of antioxidants, vitamins, minerals, fiber and good fats that are healthy for your teeth and your whole body.
