Overnight Oatmeal for Easy Back-to-School Breakfast

Mornings can be hectic, especially when school first starts back up. If you’ve never tried overnight oatmeal, back-to-school is the perfect time to try. Overnight oatmeal is made from old-fashioned oats that are mixed with other ingredients and let to sit overnight in the fridge.

In the morning, you have the perfect breakfast that’s easy to grab-and-go, highly nutritious and that kids will love. Most recipes take less than five minutes of prep time. Here are two classic recipes to try.

Classic Overnight Oatmeal

Ingredients (makes 2 small servings):

  • 1 /3 cup plain Greek yogurt
  • 1/2 cup (heaping) rolled oats
  • 2/3 cup unsweetened milk, any kind will do (regular,fat-free, almond milk, soy milk, etc.)
  • 1 tablespoon chia seeds or ground flaxmeal
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 0-2 tablespoons honey or maple syrup (or substitute for _ ripe banana, mashed)
  • Preparation:

    Whisk all of the ingredients together in a medium-sized bowl. Spoon mixture into serving bowls or mason jars and cover tightly with plastic wrap or a tight-fitting lid. Refrigerate overnight or for at least 4 hours.

    Carrot Cake Oatmeal

    Ingredients (makes 2 small servings):

    Prepare the same way as the Classic Oatmeal recipe.
