4 Healthy Green Snacks for St. Patty’s Day

For some, St. Patrick’s Day involves mountains of green cupcakes and cookies.

But don’t forget there are many naturally green foods out there! Here are some favorite green picks for your St. Patrick’s Day celebration no sugar pitfalls needed!

1.) Artichoke and spinach dip: Add the following ingredients to a food processor and blend them until smooth. Then serve with pita chips and enjoy!

2.) Shamrock chips: Make your own festive chips with a shamrock cookie cutter and spinach tortillas. Mist the shamrocks with olive oil, add a little salt, then bake for 5-10 minutes at 350 degrees.

3.) Avocado deviled eggs: Hard boil six eggs, peel them, and cut them in half lengthwise. Put the yolks in a bowl and mash them with one ripe avocado. Stir in 1 tbsp. plain yogurt, 2 tsp. Dijon mustard, 1 tsp. vinegar, _ tsp. salt and 1/2 tsp. black pepper. For an extra kick and crunch, stir in 1 tbsp. minced jalapeno and 1 tbsp. finely chopped onion. Spoon the mixture into the egg whites and serve chilled.

4.) Green or rainbow skewers: For green skewers, dice up green apples, pears, honeydew melon, kiwi, and green grapes, and arrange them on bamboo skewers. For rainbows, use purple grapes, blueberries, green grapes, pineapple, oranges, and strawberries. For a rainbow veggie version, try using cherry tomatoes, red, orange, yellow and green bell peppers, yellow squash, zucchini, red opinions and purple potatoes.
